Let me start out by saying that coconut anything is never my favorite, but when I bit into these cupcakes to test them I literally said “wow” outloud to myself. They are incredible. The coconut flavor is just enough without being overwhelming. I was going to pair them with a white chocolate buttercream but I was out of white chocolate…pff. So that will come another day! :) And I realized that I have not done a vanilla buttercream on the blog yet, which is pretty crazy. I’ve gotten many compliments on this icing, it isn’t too sweet and the texture is not anything like butter!

Vanilla Cake Pops

As you probably saw on my first cake pop post, I knew these little bebes would be a dessert I’d be making again and again. Now let me tell you, I have taken tons of treats to work for my coworkers, but cake pops seem to be the top request that I have been getting for the past couple of months since I first took some in. Funny thing is, only like 5 employees even got to try them but everybody is begging for them, due to their recent pop up in coffee shops.

I cannot believe I haven’t blogged this one yet. This is my favorite classic chocolate cake, no surprises or gimmicks, no pistachio or raspberry puree, but a wonderful cake paired with a classic creamy frosting that will melt your heart. Perfect for a rainy afternoon (yes, Portland weather is terrible) or any day you’re craving a little comfort food. This is usually the cake that I make for myself during finals.. :)

The cake does not require any softened butter, sour cream, buttermilk, or anything else fancy. It only includes ingredients that you should have in your cupboards at all times. Also, the cake calls for milk and oil, eliminating any softened butter. No softened butter? Shut the front door!

Snickerdoodles

I’ll be the first to tell you that I don’t even like Snickerdoodles. My mom (Shirl the Pearl) made them while I was a kid and of course I ate them, but I would have never asked for them over any others. A few years ago when Fabian came to visit me during Christmas break he had the chance to try them and really liked them.

Looking at the Martha Stewart Cookie Book I started to rethink my harsh judgment against them. What drew me to the recipe specifically was the amount of ingredients and the fact that all of them are always in my kitchen! No last minute run to the store to grab whatever is missing, it’s stuff I already have! Yay! :)

Okay, if you don’t own the Martha Stewart Cookie Book yet (or the e-book, go me!) you need to get it! I can’t even begin to tell you how many delicious cookie recipes there are, aaand they are organized by texture! Yesss..Amazing.

The first cookies I made from the book were these delicious Cakey Chocolate Chip Cookies. And you all know I have a favorite recipe already…but these are seriously too freaking good. They have lower amounts of sugar and butter which gives them a fluffy cakey texture. It makes them feel lighter than a typical chocolate chip cookie. Warning, they feel so light that you feel like you can eat ten instead of five!

Strawberry Rice Pudding!

Where do I even start?? I had never had rice pudding until this AMAZING place opened up two blocks from my apartment last spring…. Pudding on the Rice. It’s the cutest little shop that serves chilled rice pudding in a variety of flavors, including my favorite, Strawberry Fields Forever. You can order a sweet or savory crepe that is made to order, a rice bowl filled with veggies, frozen yogurt, or of course…rice pudding. I’ve been addicted ever since I first went and keep my punch card handy. If you like them on Facebook, they’ll let you know when you can get free treats, get %15 off, etc..

Ahhh… Yes. My favorite fruit, infused into a buttercream! I was planning on making vanilla buttercream and then I looked in the fridge and saw two pints of strawberries… :) I could have made a strawberry cupcake too, but there are too many times that I forfeit vanilla for something eh…more exciting. I don’t give the sweet taste of vanilla enough credit. But who does?? A few months back I took my niece Olivia to Cool Moon Ice Cream and when she said she wanted vanilla, I gave her the “Really Livvie? Don’t you want chocolate or banana or strawberry?” when I shouldn’t have questioned her. :-/ I guess that means that she appreciates the simpler things, right? So anyway. Sticking with the vanilla cake, but strawberry buttercream sounded too good to pass up! :)

Cake Pops!

Omg….What took me so long?? These are so cute! I have heard a lot about these little bebes, browsed through Bakerella’s book Cake Pops at Powell’s, and recently have seen them pop up in coffee shops…PS, Starbucks did not invent these, they’re not that cool, okay? So anyway, it happens to be my sister Natasha’s 28th birthday, and it just so happens that she has recently become infatuated with cake pops at her local coffee shop. She even brought me one and said “I know yours would be better so I need you to make them.” So here I am…about to dive into the world of cake on a stick..

Chicken Tortilla Soup

Chicken Tortilla Soup is one of my favorite soups! Whenever I see it on a menu I order a cup. I hadn’t really thought of making my own until recently when I have had incredible luck with other soups and chowders. I come from somewhat of a Hispanic background, my Dad is half Mexican and half Korean. Olivia’s Owls

My cute little niece Olivia turned six! I knew I’d have to make some kick-butt cupcakes for her birthday party so I turned to my girlfriend Martha Stewart for some ideas….. I found these cute little owls (I know, owls aren’t typically considered cute) and decided I’d tweak some things and make them my own. Olivia is not your standard six year old, she loves birds, has bug catching kits, and knows WAY too many latin plant names..so when I saw the owls I knew she’d like them :)

All of my favorite candies have two things in common….chocolate….and caramel…Twix, Milky Way, Snickers, Milka Crunchy Caramel, that one thing from Milwaukie Candyland, etc… So I decided to put these two into a cupcake! :) I have made caramel buttercream before but it was only semi-homemade. I will include options for either, but I assure you, caramel is not hard to make :) It just takes a careful eye.

I am always in the mood to bake. The thought of putting on my cupcake apron, blasting some music, and covering myself in flour is just too tempting! But the urge to bake gets even more prevalent when there is something else I should be doing, like homework, or cleaning, or exercising. Oops. Oh well! I guess baking is my form of procrastination. :) I should have been doing my German project but instead I decided to make some cupcakes!

Breakfast at Isabel

Thanks to our obsession with Groupon my bf and I purchased the perfect one for Isabel in the Pearl District. It was $10 for $20 for breakfast, fantastic! We hadn’t been there before….and we will be going back for sure!! Our service was very good, not busy but I would guess weekends are packed! We picked the perfect day to go. :)

Our food was fantastic. I had read a lot of reviews online before going so that I would have an idea of what to pick. I ordered the Blackberry Pancakes, which were soooo good! 3 perfect sized pancakes with a great texture and perfect amount of berries. I also liked that they aren’t blueberries, everybody does those! Served with a little pad of butter, (not a heart stopping amount) delicious maple syrup, and a sweet little amount of blackberry puree! Yum! Read the rest of this entry »


Mmm. America’s favorite cookie. And with all the popularity that the chocolate chip cookie has, it’s still hard to find one with the right balance of crispy/chewy that I’m looking for. I also am one of the few people that enjoys a cookie that is not entirely full of chocolate chips.. (I know, I know..weird) But if I wanted all that chocolate I’d made fudge. Right?
